TGIF!

It's pizza night! We usually do pizza around here on Fridays.

Leo helped me with the crust. I tried to explain "yeast" to him, only to realize that I don't really know what yeast is...

We're going to have eggplant, red pepper, and kalamata olive pizza tonight. I've been experimenting with eggplant recently, so this is my first time to try it on a pizza. I Googled around and kinda came up with my best idea of what I wanted. I got out all the ingredients so I don't forget anything when it's time to top. I'm using Parm-Regg, Fontina, red pepper, eggplant, olives, chili garlic, red pepper, pesto, and maybe arugula. Leo wants pepperoni, so I'm going to do a special section for him.

I sprinkled some cracked pepper on the sliced eggplant and broiled it and the red pepper at the same time.

After the red pepper had been charred on all sides, I put it in a ziploc bag so it could steam a little. This makes it easy to remove the skin and seeds.

After it has cooled in the bag, the skin slips right off. I also removed the seeds.

Final verdict - I'm pretty medium on eggplant on pizza. If I were to make this again, I'd add tomatoes to the toppings, and I'd cut back on the fontina and add feta to the cheeses. The kalamata olives were a highlight. I think I'll use them from now on. We didn't use the arugula - just didn't sound good. The garlic and black pepper crust was delicious - my favorite crust so far, I think. Overall it was very good, but needed another little kick.
