Quinoa and Potato Croquettes

After trying quinoa for the first time a couple of weeks ago, I wanted to try it again in a different recipe - as a main dish instead of a side. And, as you might have noticed, it's hard for me to pass up any patty recipe! So tonight I made Quinoa and Potato Croquettes.

I baked the potato in the microwave early in the afternoon so it would have plenty of time to cool.

Leo is into helping these days, so he helped me drain the cottage cheese, measure the quinoa, and grate the cheese.

One mistake I made...I had quinoa pilaf from the CM bulk bins. It has lentils in it, but I thought I'd be cooking the quinoa beforehand, so no big deal. Well...it went in raw with no boiling. I was worried we'd break a tooth on some of the brown and yellow lentils. So I had quite a time getting them out. I finally got them sorted using a slotted spoon. I left the red ones in since they are so delicate. It was really a hassle. I'll have to get some plain quinoa.

Anyway, I sauteed the onion mixture, then mixed everything together and let it cool a little bit.

Then I formed patties and dredged them in Panko. That's another reason I chose this recipe - I love panko! Gives things a great crunch without real frying.

I fried them in my cast-iron skillet, and I served with Garlicky Green Beans (a staple around here) and Cole Slaw. We have lots of cole slaw b/c I always have cabbage left over from making wraps.

Henry loved the croquettes! He had his with some black beans.

Leo chose a PB sandwich (his only alternative to eating supper I've cooked), but he did try green beans for the first time in years. He was amazed that he could eat one without throwing up! (rolling my eyes) He only ate one - that's a start, I guess.

I served with a dollop of sour cream and salsa, as the recipe recommended.

I thought this was great! The flavors were unique, and the textures were very crunchy and fresh. Loved it! It will definitely be easier when I buy the right kind of quinoa.

This inspired me to go get some quinoa, which I hadn't had in years.
I'm sure you found some already, but they had it in the bulk aisle at Sprouts too.
