Southwestern Steak, Corn, and Black Bean Wraps

We love these wraps for a quick supper, and it gets high marks from me b/c it is very lunchbox-friendly. I often pull this recipe out for busy times b/c it can all be prepped and even assembled early in the day.

I start with flank steak from Sam's - they have the best price I've found. They come in a pack of two, so I freeze one. I marinate the steak in Worcestershire, sea salt, and black pepper for a few hours, and then Todd grills it. I often do this the night before just so that they are ready to go for supper.

The salsa consists of corn, red onion, black beans, cilantro, and lime juice. We love it, so I double it and we enjoy dipping chips in, too.

Then I just shred some MJack with Jalapenos and then assemble.

And we always use the leftovers for lunch the next day.
