I had most of the ingredients already in my pantry. I did go get some Yukon Gold potatoes, since I know they hold up better in stews like this. It also had a jalapeno - I hadn't gotten it out at this point.

It starts by sauteeing all the veggies, pepper, and garlic until soft.

Basically after they get soft, you add everything else...bring to a boil...then cover and simmer for 15 minutes or until the potatoes get soft. Things got busy, and I didn't get a picture.
It calls for this to be served with brown rice, but I had Basmati, so I used that. Then you put a dollop of yogurt on top and sprinkle with cilantro. I forgot to buy cilantro, and that would have really added something. Overall, I thought it was very yummy. Great flavors, and it was pretty simple and quick to get to the table. I made coleslaw to go with it b/c I had leftover cabbages from wraps I made over the weekend.
